Every game here is playable sober. Where a rule calls for a drink, the rules also say what to do instead — the fun does not depend on it. Sips, not shots. Nobody has to prove anything to anybody.

The only bar game where being good at math is less useful than having a face that gives nothing away. You bid on dice you cannot see and you lie about the ones you can. Everyone at the table learns something about you and none of it is flattering.
House rule: Bitch Love rule: any player who says "I knew it" after the reveal loses a die on the spot. You did not know it. You never know it.
Pure greed with a scoreboard. Every roll asks whether you bank what you have or find out what happens next, and the answer is usually wrong. No drinking in this one. The dice are cruel enough on their own.
House rule: Three Farkles in a row and you lose 1000 banked points. It hurts exactly as much as it should, and it stops the table from rolling forever.
